Assyrtiko is the third most widely planted white grape of Greece, the intense character it gains from the volcanic soils of its native Santorini having inspired wine makers throughout the country to give it a try elsewhere, and with notable success. Assyrtiko grown on Santorini is trained in a circle, creating a sort of nest that protects the fruit from prevailing winds. Clearly, this is an extremely high-quality grape.
