Sweet wine, AKA pudding wine or dessert wine. The finest sweet wines are among the world’s greatest wines. Sweet wine can either be created by activities in the vineyard – late picking of super-ripe grapes, or desiccation through the actions of noble rot (Botrytis Cinerea) – or in the winery - through a period of air-drying the fruit, or by stopping fermentation before all the sugar has been consumed by yeast. After many years of being deeply unfashionable, sweet wine’s popularity is now in the ascendant although it often expensive due to the complexities and unpredictability of its production.
